This fruity Pinot Noir comes from the Birichino Estate at the base of the Santa Cruz Mountains in the Central Coastal region of California, benefitting from the cooling effects of the Pacific breeze.
The Birichino philosophy is to use minimal intervention, this means that they do not add yeast, to make the wine ferment, but rely solely on the natural yeasts which occur on the skins of the grapes. After fermentation the wine is matured in expensive French oak barriques. It's unfiltered when bottled, so it may need decanting - but it's well worth the effort!
