We often enjoyed a bottle of Pouilly Fuisse when dining out in fine restaurants, so much in fact that we started to treat ourselves to a bottle at home. When we tasted La Soufrandise for the first time we noted in our tasting book that it was of outstanding quality, not something that we say lightly. Drink on its own or with stronger flavoured seasoned fish in sauce or white meat dishes with cream sauces or with soft cheeses.
Domaine la Soufrandise is a small vineyard located right in the middle of the Pouilly-Fuissé area under the stewardship of Francoise and Nicolas Melin. More than half of the domaine’s vines are over 45 years old and now producing fruit with highly concentrated flavours. Like most vineyards in Burgundy, the vines are situated in many different locations (20), so there’s a great deal of flexibility when they make the final blend. At La Soufrandise grape cultivation is semi-organic; spraying is avoided when possible, and only manure is used as a fertilizer.
Harvesting is by hand, only natural occurring yeasts are used for the fermentation, and the finished wine is allowed a period of at least 10 months to age on its lees before bottling. The ‘lees’ are the spent yeast cells contained in the tanks or oak barrels once the fermentation is completed. Giving the wine a period of lees ageing before bottling allows more complex flavours to develop.
